Baked salmon with nectarine salsa
This dish is rich in flavors, textures and even in nutrition. The nectarines and the Granny Smith apple lend a fruity and crunchy bite to in the salsa. It's perfect for a cozy spring - summer dinner!
Step by Step

Preheat oven to 160*C/320*F. Zest and juice the lemon. Peel Granny Smith apple. Chop nectarines, canned sweet corn, cucumber, and apple into small bite-sized pieces. Transfer the pieces to a bowl and mix with lemonn juice and zest. Let marinate for at least 5 mins. 1 lemon, 1 Granny Smith apple, 2 nectarines, 1/2 cucumber, 100g canned sweet corn
