-       Cook noodles according to the directions on the package. In a bowl, mix soy sauce, lemon juice, honey, cornstarch, and 1/4 cup water; Stir in the ginger.

-       Heat 1 tablespoon oil in a large skillet over medium to high heat. Stir-fry the celery and peppers for 3 minutes. Add garlic and chestnuts and stir-fry for 1 minute; Transfer to a bowl.

-       Heat the remaining tablespoon of oil over medium-high heat. Season beef with 1/2 teaspoon black and brown pepper, 2 to 3 minutes. Add soy sauce mixture and cook for 1 minute.

-       Return the vegetables to the pan. Add the edamame and cook, stirring, until heated through, about 1 minute. Served with vermicelli.

2.     Pork

The reason why pork is considered to be lucky on New Year's is the cue from pigs who are known to push forward as they eat. Another reason—since pork is so fatty and rich, it can symbolize wealth on New Year's Day.

·      Ingredients:

-       1/2 c. all-purpose flour

-       2 tsp. seasoned salt, such as Lawry's, divided

-       1/2 tsp. ground black pepper

-       1/4 tsp. cayenne pepper, optional

-       1 egg

-       1/2 c. milk

-       1 c. panko breadcrumbs

-       1/4 c. grated parmesan cheese

-       4 boneless pork loin chops (about 1" thick)

-       Nonstick cooking spray

-       Salad and mashed potatoes, for serving

·      Method:

-       Remove the pork chops from the refrigerator about 30 minutes before cooking. Sprinkle the chops evenly with 1 teaspoon of salt, then leave at room temperature.

-       In a shallow bowl, whisk together flour, remaining 1 teaspoon salt, black pepper, and cayenne pepper. In a second shallow bowl, beat eggs and milk. In a third shallow bowl or plate, mix the panko breadcrumbs and parmesan cheese.

-       Pat the pork chops dry with a paper towel. Dip each pork chop into the flour mixture, then pat to remove excess. Next, dip each one into the egg mixture, letting the excess drain. Finally, scrape each in the panko breadcrumb mixture and place it on a clean plate. Lightly spray both sides of the pork chops with non-stick spray.

-       Preheat the air fryer to 400 degrees. Place the ribs in a single layer in the air fryer basket and cook for 8 minutes. Flip ribs and cook for 4 more minutes or until internal temperature is at least 145 degrees.

-       Serve with a green salad and mashed potatoes.
