Step 1

Mix the strawberries and sugar together, then whizz in a liquidiser or using a hand blender until completely smooth. Strain through a fine sieve into a large, freezerproof container.

Stir in the wine and Aperol, then cover and freeze overnight until solid.

Step 3

Break the mixture up with a serving spoon and liquidise in 2-3 batches to create a thick, smooth mixture with evenly sized crystals. If it’s too solid, leave out of the fridge for 10-15 minutes first, then pour into 10 glasses and serve.
