Step 1

Halve the melon, scoop out the seeds with a spoon and discard. Slice each half of the melon into 8 wedges. Cut away the melon flesh from the rind, keeping the melon in large pieces.

Step 2

Scatter three-quarters of the rocket leaves over a large bowl or serving platter. Top with the melon wedges.

Step 3

Tear each slice of ham in half then arrange over the melon along with the feta cheese and remaining rocket leaves. Sprinkle over the mint and some freshly ground black pepper.

Step 4

Whisk together the lemon juice and olive oil then drizzle over the top of the salad. Serve immediately.
