Step 1

Cook your noodles according to package instructions. Transfer the cooked noodles to an ice bath, and let cool down for about 1 minute. Drain, and set aside.

Place the soy sauce, dashi, water, bonito flakes, and mirin in a small pot. Bring to a simmer over low heat. Cook for 5–7 minutes, until the mixture is fragrant. Pour the mixture through a sieve into a heatproof bowl. Discard the bonito flakes.

Step 3

Add about ½ cup of the strained mixture to a bowl. Add the ice cubes, radish, lemon juice, wasabi, and scallions. Add more or less of any ingredients to taste. Serve with the soba noodles.
